Region: Brisighella (Ravenna IGT), Emilia-Romagna, Italy

Grape variety: Sangiovese

Location: steep southern hillsides, 300 m.a.s.l.,microclima Terroir – yellow clay with sand and ochre loam

Harvest: Manually harvested in small boxes

Method of fermentation: The fermentation takes place in steel tanks at a controlled temperature, maceration in steel tank for 4 weeks.

Finishing: After the biological acid degradation the wine is stored until bottling in barrels of 500 lt and in Barriques of 225lt with a new wood content of 30%. Afterwards 24 months bottle maturation.

Alcohol: 13.5%

Enjoyment maturity: Immediately, we recommend a storage of 2 years. The maturing potential is 8-10 years

Service temperature: 16 to 18°C

Recommended for: Meat or venison, pasta, cheese
